- 3 passion fruit
- 500 ml leche
- 500 ml cream to assemble
- 200 ml almíbar
- 8 egg yolks
- 150 grams sugar
First, wash and peel the passion fruit and mango.
Next, introduce the chopped fruits into a blender glass and blend until leaving a juice with the fine pulp.
In the next step, beat the egg yolks with the sugar with rods in a bowl until it is a uniform dough. Next, mix with the crushed fruit.
Heat the milk with the cream and syrup in a saucepan for 5 minutes while stirring.
Mix the milk and cream with the previous fruit mixture, little by little without stopping moving.
Reheat the mixture of milk, cream, pulp juice and other resulting ingredients over medium heat for another 5 minutes. Let cool.
Put the mixture in the fridge. You can leave it overnight or even longer.
Finally, in the last step, freeze for 5 hours and beat in periods of 30 minutes for an ideal texture.
For the syrup, heat 200 ml of water with 200 ml of sugar until well mixed and set aside.
