A healthy recipe
It is a healthy recipe, since the ingredients are natural and healthy. Likewise, we can buy cashews throughout the year as they are a dry fruit. The same goes for coconut oil.
You can also buy these roasted nuts. However, I prefer to roast them at home to leave them to my liking. Also, freshly roasted they are easier to grind.
On the other hand, extra virgin coconut oil is ideal to give creaminess in these recipes. You can also use another oil such as extra virgin olive.

Ingredients
- 4 cups raw cashews
- 2 tablespoons extra virgin coconut oil

Preheat the oven to 160ºC and place the raw cashews on a medium-sized baking sheet. Spread the nuts evenly and toast them for 10-15 minutes, or until lightly browned. Let cool for 10 minutes.
Place the cashews in a blender glass. Blend until a fine dough is left. Add the coconut oil and beat a couple more minutes to get the desired consistency and mix well.
Store in jars with a lid and store in the fridge.
Recipe Notes
I recommend using the recommended 4-cup serving in a regular blender glass. With more quantity it will be difficult for you to leave a fine texture in the butter.
